I have always enjoyed cooking and baking deserts. Three years ago when I was In New Orleans I had a pretty cool pastry called a Benignet at Cafe du Monde. It was similar to a doughnut but a lot lighter and it was square. I really like Beignets and decided to do some research, here is what I found:
The history behind the Beignet and how It's made

During my research I found out that Beignets could have meat and different kinds of fillings in it, and is not always served as a desert. The only Beignets that me and my family have ever had were the deep fried desert version that usually has powdered sugar on it. My mother has been to France and tasted Beignets there and said that the Beignets at Cafe du Monde are very close to what she had in France. Since my trip to New Orleans, I bought the Cafe du Monde brand Beignet mix from Meijer and it tasted just like they were from the cafe in New Orleans. As it says in the link, Beignets are cooked fresh and are best served hot.

At Cafe du Monde in New Orleans, Louisiana you can watch the cook make the pastry through the glass window and its cool how fast they make them and how effortless they look while doing it.
Now, if you are brave, you can follow this link and make beignets from scratch. I have not tried to make them from scratch yet, but I have used this link along with the Cafe du Monde mix to learn how you hand mix the dough and cut it into squares.
